5 Course Cider Dinner Pairing
Just when you thought you wouldn’t get through the late winter doldrums, the team of Donovan & Donovan, (and company), dazzled guests with their exquisite Cider Dinner Pairing in Barker-on-the-Lake, New York.
The sold-out event kicked off with a pre-dinner reception, welcoming guests with a glass of cider and informal tour of the tasting room and production facility. Sliced baguettes with two flavored whipped butters (honey and red pepper flake & shallot and herb) were paired with the semi dry Orchardist’s Reserve Cider. Guests were seated shortly thereafter to enjoy the cider paring dinner, following a warm welcome by owner, hosts, Scott & Stacie Donovan. The event premiered their newest additions to delicious craft hard ciders.
The elegant dining and cider experience was set in an intimate section at the cidery. The informative hosts and servers (actual cider making staff) introduced and poured their new ciders, paired perfectly with savory entrees from the infamous, three generation, Calhoun’s Pub and Kitchen, under Chefs Tom Lang and Morgan Calhoun.
The salad course comprised of bitter greens with mustard vinaigrette topped with bacon, blue cheese, pistachios, apples paired with Green’s Inn Dry Heirloom Cider, expressed from a type of apple, originally from Newport, RI, that dates back to the Middle Ages.
The soup course was a hot potato, leek, and apple soup. Paired with Goldrush Dry Cider.
Chicken curry over mashed potatoes (or fried chickpeas for the vegetarian) paired with Sparkling Black Rock Kingston Black Dry Cider rocked our tastebuds as the main course.
The dessert course was a delicate and perfectly portioned Cinnamon Shortbread paired with The Apple Highway Sweet Cider – my personal favorite, although difficult choice…
